The State of Lo-No in 2026 (Part 2): How Alcohol-Free Beer Is Made at Craft Breweries

In Part 1, we broke down the real brewing costs and duty myths behind non-alcoholic beer. Now, we’re peeking under the brewhouse hood to answer the big technical question: How do we actually get full flavour out of a beer with almost no alcohol?

A lot of people run to Google to ask whether alcohol-free beer is “easier” or “cheaper” to brew. Guess what. It’s not.

At Shiny, we brew alcohol-free beer using the exact same core ingredients as our regular range: water, malted barley, wheat, hops, and yeast. We also use the same several-week brewing process. What changes is the fermentation stage.

We use a specialist yeast strain that naturally produces very low alcohol. As many low-no enthusiasts will tell you, that is less alcohol than you would find in a ripe banana. In our alcohol-free Hazy Pale Ale, Chill (0.3% ABV), this allows us to deliver big, juicy tropical fruit notes from Citra and Sabro hops while keeping the ABV naturally capped.

The beer still ferments and creates flavour, but it needs much tighter control to keep the final product under 0.5 percent without losing character. Research into low and no alcohol beer production shows that specific yeast strains can limit ethanol production while still generating flavour-active compounds.

Yeast Science vs. Industrial Alcohol Stripping

This is one of the biggest misconceptions around non alcoholic beer. It is not “diet beer” or “beer lite”. It is beer that requires extra skill, extra attention, and a very specific approach.

Large international breweries often use vacuum distillation or filtration to remove alcohol after brewing. Both of these processes require expensive industrial equipment and additional processing steps that can strip out delicate hop aromas and light malt body.

Smaller craft breweries like us rely on yeast science, grain bill design, and hopping techniques to retain natural flavour without relying on large-scale de-alcoholising machinery.

Precision Brewing: Skill, Intention and No Short Cut

Because we aren't stripping alcohol out at the end, every single step in the mash tuner and fermentation vessel matters.

Temperature control must be spot-on, sanitation must be absolute, and hop additions must be carefully balanced so the beer doesn't taste overly sweet or thin. It requires proper technique and constant monitoring.
